NuYou Baba-Ganoush (Eggplant Dip)

Ingredients
- 15 ounce Albacore Tuna thoroughly drained, flakes
- 1/2 cup egg whites (about 4 eggs)
- 1/2 cup Old Fashioned Oats
- 2 tbs chives, chopped
- 1 tbs Dijon Mustard
- 2 tsp Fresh Lemon Juice
- 1 tsp Garlic Powder
- 1/4 tsp each Salt and Pepper
- dash Cayenne Pepper

Instructions
- Combine all ingredients in a large bowl and mix until combined.
- Bring large skillet, with non-stick spray, to medium-high heat.
- Separate mixture into 4 mounds, flatten into patties about 1/2 inch thick.
- Cook until browned and cooked through, about 4 minutes per side.
