NuYou Baba-Ganoush (Eggplant Dip)

- 6 cups Romaine lettuce
- 2 cups shredded chicken (rotisserie) breast
- 2 cups bean sprouts
- 1 cup carrots, shredded
- 3/4 cup sliced celery
- 2/3 cup coconut milk
- 1 tbsp Splenda Brown Suger
- 1 tbs creamy peanut butter
- 1 tbs Fresh Lime Juice
- 2 tbs Low Sodium Soy Sauce
- 1/8 tsp ground red pepper

Instructions
- Combine first 5 ingredient in a large bowl, and set aside.
- Combine coconut milk and next five ingredient in a small sauce pan, bring to a boil. Reduce heat and simmer for 5 minutes, it will thicken slightly. Remove from heat and let cool for 2 minutes.
- Pour dressing over lettuce mixture and sprinkle with chopped peanuts.
- Serve immediately, with lime wedges if you would like.
