Thai Chicken Salad with Peanut Dressing

Instructions
  1. Combine first 5 ingredient in a large bowl, and set aside.
  2. Combine coconut milk and next five ingredient in a small sauce pan, bring to a boil. Reduce heat and simmer for 5 minutes, it will thicken slightly. Remove from heat and let cool for 2 minutes.
  3. Pour dressing over lettuce mixture and sprinkle with chopped peanuts.
  4. Serve immediately, with lime wedges if you would like.
