NuYou Baba-Ganoush (Eggplant Dip)

Ingredients
- 1 tbsp olive oil
- 2 cups Chopped Red Onion (large)
- 6 cloves garlic, minced
- 1/2 cup Ketchup, divided
- 1 3/4 lbs 90% Lean Ground Sirloin
- 1 1/2 cups fresh Whole Wh (Sara Lee 45 Calorie Slice)
- 1/4 cup Fresh Basil
- 1 tbsp Spicy Brown Mustard
- 1/2 tsp Kosher Salt
- 1/2 tsp Black Pepper
- 3/4 cup Parmesan Cheese (3 oz)
- 2 Eggs, large

Instructions
- Preheat Oven to 375 degrees. Heat non-stick skillet over medium high heat. Add oil, swirl to coat. Add onion and garlic and sauté 5 minutes. Cool slightly. Combine Onion mixture, ¼ cup of ketchup and remaining ingredients in a large bowl and mix well. Press into loaf/bread pan tightly, invert on foil lined baking sheet. Remove loaf pan. Bake meat loaf at 375 degrees for 45 minutes. Brush top with remaining ¼ cup of ketchup and bake for another 10 minutes. (Thermometer should read 155). Remove from oven and let stand for 10 minutes and then cut into eight slices. Serve & Enjoy!
