Ingredients
- 3 Heads baby Bok Choy trimmed and thinly sliced
- 2 C Shredded Red Cabbage
- 1/2 Fresh Pineapple peeled, cored and chopped
- 2 Tbsp. Cider Vinegar
- 2 tsp. Brown Sugar Substitute
Jerk Seasoning
- 1 tsp Onion Powder
- 1/2 tsp Sugar
- 1/2 tsp Crusted Red Pepper
- 1/2 Crushed Dried Thyme
- 1/4 tsp Salt
- 1/4 tsp Ground All Spice
- 1/4 tsp Ground Cinnamon

Instructions
- Combine Bok Choy, cabbage, and pineapple. Drizzle vinegar mixture over it. Pulled chicken equal to two breasts (8 to 10 ounces) 1 teaspoon jerk seasoning* 1 teaspoon oil Place pulled chicken in a bowl and sprinkle 1 teaspoon jerk seasoning and mix to coat. Warm in oil slightly on stove top. Top with Bok Choy mixture.

- Jerk seasoning is available in the spice section of grocery store or you can make your own
