NuYou Baba-Ganoush (Eggplant Dip)

Ingredients
- 1 C Sliced Almonds, toasted
- 3 Tbsp. Red Wine Vinegar
- 1/3 C olive oil
- 1/4 C Fresh Cranberries
- 1 Tbsp. Dijon Mustard
- 1/2 tsp. Minced Garlic
- 1/2 tsp. Salt
- 1/2 tsp. Black Pepper
- 2 Tbsp. Water
- 1/2 Red Onion thinly sliced
- 1 lbs. Salad Greens
- 4 oz. Crumbled Blue Cheese (Optional)

Instructions
- Preheat oven to 375 degrees. Arrange almonds in a single layer on a baking sheet. Toast for about 5 minutes, or until they begin to brown. In a blender, combine vinegar, oil, cranberries, mustard, garlic, salt, pepper, and water. Blend until smooth. In a large bowl, toss almonds, onions, greens, and blue cheese IF USING, with the vinegar mixture, mix until coated. Serve.
