NuYou Baba-Ganoush (Eggplant Dip)

Ingredients
- 1 1/2 lbs. Flank Steak trimmed and scored
- Lettuce Leaves
- Sliced Seeded Cucumber Slices
- Grape Tomatoes
- Crumbled Feta Cheese
Marinade (whisk together) :
- 1/2 C olive oil
- 3 Tbsp. Fresh Lemon Juice
- 3 Tbsp. Red Wine Vinegar
- 3 Tbsp. Shredded Onion
- 2 Tbsp. Minced Garlic
- 2 Tbsp. Dried Oregano
- 1 tsp. Salt and Pepper
Dressing (Puree):
- 1/4 C Fresh Mint
- 1/4 C Plain Greek Yogurt
- 2 Tbsp. Crumbled Feta Cheese
- 1/2 C Marinade

Instructions
- Put ¾ of marinade in Ziploc plastic bag and add steak; place in refrigerator to marinade for 2 hours. Reserve ½ Cup of marinade for dressing. Remove bag from refrigerator 30 minutes before cooking steak. Remove steak and add salt and pepper. Grill on high 4-6 minutes per side. Let rest 5 minutes tented with foil. Thinly slice against the grain into bite size pieces. Separate lettuce leaves into 6 serving sizes and add cucumber slices, tomatoes, steak and top with dressing.
