NuYou Baba-Ganoush (Eggplant Dip)

Ingredients
- 3/4 lbs. Trimmed Green Beans
- 1/2 C Silvered Red Bell Pepper
- 2 Tbsp. Fresh Chives
- 2 Tbsp. White Whine Vinegar
- 2 Tbsp. olive oil
- 1 tsp. Dijon Mustard
- 1/2 tsp. Kosher Salt
- 1/2 tsp. Black Pepper
- 2 Tbsp. Minced Shallots

Instructions
- Cook beans in boiling water about 3 minutes (tender crisp). Drain and plunge into ice water 9this will stop cooking process and keep the bright green color). Drain water. Put in a medium bowl and add bell pepper. Combine remaining ingredients and whisk. Drizzle vinaigrette over beans and toss to coat.
