NuYou Baba-Ganoush (Eggplant Dip)

Ingredients
- 4 Large Eggs
- 1 tablespoon chives, minced
- 3/4 teaspoon Kosher Salt
- Black Pepper to taste
- 1/4 cup Corn Starch
- 1/2 teaspoon baking soda
- 1 10 oz package frozen spinach, drained and thawed optional
- 2/3 cup finely sliced ham optional
- 1/2 teaspoon Apple Cider Vinegar
- 2 tablespoons olive oil

Instructions
- Whisk together eggs, chives, salt and pepper. Stir in corn starch, baking soda and vinegar until well combined. Add optional ingredient to the combination for added flavor.
- Heat 1 tablespoon oil in a large skillet over medium heat. Working in 2-3 batches, scoop 3 tablespoons of batter for each pancake, do not crowd them. Flatten to 1/2 inch thick and cook until golden brown, about 2 minutes. Flip and continue cooking other side.
- Serve and Enjoy.
