  1. Whisk together eggs, chives, salt and pepper. Stir in corn starch, baking soda and vinegar until well combined. Add optional ingredient to the combination for added flavor.
  2. Heat 1 tablespoon oil in a large skillet over medium heat. Working in 2-3 batches, scoop 3 tablespoons of batter for each pancake, do not crowd them. Flatten to 1/2 inch thick and cook until golden brown, about 2 minutes. Flip and continue cooking other side.
  3. Serve and Enjoy.
