NuYou Baba-Ganoush (Eggplant Dip)

Ingredients
- 6 C Raw Low Sodium Chicken broth
- 1 C Chopped Green Onion
- 1/4 tsp. Sugar or Sugar Substitute
- 1/4 tsp. Salt
- 3 Tbsp. Cornstarch
- 3 Tbsp. Low Sodium Soy Sauce
- 1/3 C Cold water (plus 2 Tbsp.)
- 3 Eggs

Instructions
- Bring broth and ¾ cup green onions to boil in soup pot. Mix together sugar, salt, cornstarch, soy sauce and 1/3 cup of water until smooth. Stir soy sauce mixture into boiling broth and boil for about 1 minute. Beat eggs with remaining 1 tablespoon water into a bowl. Pour egg mixture into soup and cook, stirring with a fork until eggs are opaque (about 1 minute). Garnish with remaining green onions. ***Feel free to add vegetables, mushrooms, spinach, etc.
