NuYou Baba-Ganoush (Eggplant Dip)

Ingredients
- 2 Tbsp. Dijon Mustard
- 2 Tbsp. Red Wine Vinegar
- 2 Tbsp. Extra Virgin Olive Oil
- 9 Oz. Crab
- 1/2 Medium Tomato diced
- 1/2 Yellow Bell Pepper diced
- 1 1/2 Tbsps. Chives Chopped
- Salt and Pepper

Instructions
- In a mixing bowl, whisk mustard and vinegar together, slowly adding olive oil. Continue to whisk and season with salt and pepper. To same bowl, add crab meat, tomato, bell pepper, and 1 tablespoon of chives. Serve over Fresh Greens.
