NuYou Baba-Ganoush (Eggplant Dip)

Ingredients
- 1 tbs reduced sodium Lite Soy Sauce
- 1 1/2 tsp plain Rice Vinegar
- 1 1/2 tsp powdered Peanut Butter
- 1 tsp Sesame Oil
- half packet of Natural - No Calorie Sweetener
- 1/4 tsp crushed garlic
- 1/8 tsp ground ginger
- 10 ounce Zucchini (one large)
- 2 tbsp chopped scallions
- 1 tsp Sesame Seeds
- Red Pepper Flakes optional

Instructions
- Sauce Preparation: In a small bowl, combine soy sauce, rice vinegar, powdered peanut butter, sesame oil, sweetener, garlic and ginger. Whisk all together to combine.
- Zucchini Noodle Preparation: Spiral cut or hand cut zucchini in very thin strips.
- Combine Zucchini noodles and sauce and refrigerate for at least 15 minutes.
- Stir and top with sesame seeds and scallions.
