Cold Sesame Zucchini Noodles

Instructions
  1. Sauce Preparation: In a small bowl, combine soy sauce, rice vinegar, powdered peanut butter, sesame oil, sweetener, garlic and ginger. Whisk all together to combine.
  2. Zucchini Noodle Preparation: Spiral cut or hand cut zucchini in very thin strips.
  3. Combine Zucchini noodles and sauce and refrigerate for at least 15 minutes.
  4. Stir and top with sesame seeds and scallions.
