Sauce Preparation:
In a small bowl, combine soy sauce, rice vinegar, powdered peanut butter, sesame oil, sweetener, garlic and ginger. Whisk all together to combine.
Zucchini Noodle Preparation:
Spiral cut or hand cut zucchini in very thin strips.
Combine Zucchini noodles and sauce and refrigerate for at least 15 minutes.
