NuYou Baba-Ganoush (Eggplant Dip)

Ingredients
- 1 Medium Lemon
- 3 Tbsp. Extra Virgin Olive Oil
- 1 Large Red Onion thinly sliced
- 1 medium garlic clove smashed and peeled
- 6 boneless, skinless, chicken thighs (about 1 pound)
- 3/4 tsp. Ground Cumin
- Salt and Pepper
- 1/4 C Flat Leaf Parsley (Italian Parsley)

Instructions
- Finely grate 1 teaspoon zest from the lemon and then juice the lemon. Heat oil in a 12 inch skillet over medium high heat until simmering hot. Add the onion and garlic, cook stirring frequently until the onion begins to soften (about 4 minutes) Add the chicken, lemon zest, cumin, ½ teaspoon salt and ½ teaspoon pepper and cook until chicken is all the way cooked through Remove skillet from heat and stir in parsley and 2 tablespoons of lemon juice. Season with additional salt and pepper to taste.
