Finely grate 1 teaspoon zest from the lemon and then juice the lemon.
Heat oil in a 12 inch skillet over medium high heat until simmering hot.
Add the onion and garlic, cook stirring frequently until the onion begins to soften (about 4 minutes)
Add the chicken, lemon zest, cumin, ½ teaspoon salt and ½ teaspoon pepper and cook until chicken is all the way cooked through
Remove skillet from heat and stir in parsley and 2 tablespoons of lemon juice.
Season with additional salt and pepper to taste.
