NuYou Baba-Ganoush (Eggplant Dip)

Ingredients
- 3 1/2 c Chicken Broth Fat free, low sodium
- 1 1/2 t Soy Sauce
- 2 T Corn Starch
- 1/2 t Pepper
- 1 T Water
- 1 lg Egg
- 1 lg egg white
- 2 c Chicken Cooked & Chopped
- 1/4 c Green Onion
- 1 T Dark Sesame Oil
- 1/4 c Basil Fresh, shredded

Instructions
- Combine broth & soy sauce in a saucepan. Bring to boil over high heat. Combine corn starch, pepper & water in small bowl, whisk until smooth. Slowly whisk corn starch mixture into boiling broth. Reduce heat & simmer until slightly thickened, stirring frequently. Combine egg & egg white, whisk until blended. Slowly add to broth mixture stirring gently. Add chicken, green onions & sesame oil. Heat thoroughly. Ladle into bowls, garnish with basil.
