NuYou Baba-Ganoush (Eggplant Dip)

Ingredients
- 5 cups Cauliflower chopped
- 3/4 cup Egg Whites (about 6 eggs)
- 3 cups frozen Asian Style Stir Fry Vegetables
- 1 cup frozen peas
- 1 cup Chopped Onion
- 1 Tablespoon Sesame Oil
- 1 teaspoon chopped garlic
- 1/8 teaspoon Salt
- 1/3 cup Teriyaki Sauce

Instructions
- Pulse cauliflower in batches in a blender until reduced to rice size pieces.
- Bring large skillet, sprayed with non-stick spray, to a medium heat. Scramble egg whites until fully cooked, about 3 to 4 minutes, breaking up into bite sized pieces. Transfer to a bowl to keep warm.
- Respray skillet and return to medium-high heat. Add stir fry veggies, peas and 1/4 cup water. Cook covered for about 3 minutes. Add cauliflower rice, onion, sesame oil, garlic and salt. Cook covered until veggies are mostly softened, about 6 to 8 minutes.
- Add scrambled egg whites and teriyaki sauce, heat for about 2 minutes.
