Cauliflower Fried Rice

  1. Pulse cauliflower in batches in a blender until reduced to rice size pieces.
  2. Bring large skillet, sprayed with non-stick spray, to a medium heat. Scramble egg whites until fully cooked, about 3 to 4 minutes, breaking up into bite sized pieces. Transfer to a bowl to keep warm.
  3. Respray skillet and return to medium-high heat. Add stir fry veggies, peas and 1/4 cup water. Cook covered for about 3 minutes. Add cauliflower rice, onion, sesame oil, garlic and salt. Cook covered until veggies are mostly softened, about 6 to 8 minutes.
  4. Add scrambled egg whites and teriyaki sauce, heat for about 2 minutes.
  5. Enjoy!
