NuYou Baba-Ganoush (Eggplant Dip)

Ingredients
- 1 C Fresh Ginger peeled and chopped
- 1 Tbsp. Honey
- 32 oz. Seltzer
- 2 Tbsp. Fresh Lime Juice
- 4 Lime Wedges

Instructions
- In a pan, bring ginger, honey and 2 Cups water to boil over high heat. Lower the heat to medium and simmer until reduced to ¾ Cup, about 10 minutes. Let cool. Strain the ginger mixture into a pitcher. Add the seltzer and lime juice. Pour over ice with lime wedge.
