NuYou Baba-Ganoush (Eggplant Dip)

Ingredients
- 1 large head of Cauliflower
- 2 garlic Cloves smashed
- 4 ounces Firm Lite Silken Tofu
- 1 tbsp Butter
- 1/4 cup Chicken or Veggie Broth more if too thick
- 2 tbsp Half & Half or Fat Free Sour Cream
- Salt and Pepper to taste

Instructions
- Core the cauliflower and cut into florets. Boil or steam with garlic until very tender, about 15 minutes. Drain well and set aside. Place the tofu into food processor and process until creamy, about 30 seconds. Add the cauliflower, garlic, butter, broth, and half & half, process until creamy, about 1 minute. Add more broth if to thick. Season with salt & pepper.
