NuYou Baba-Ganoush (Eggplant Dip)

Ingredients
- 2 Tbsp. Vegetable Oil
- 4 Medium Shallots thinly sliced
- 2 Medium Cloves Garlic minced
- 1/2 tsp. Red Pepper Flakes
- 1 lbs. Chicken Breast Cutlets cut into 1" strips
Sauce Ingredients
- 1 Tbsp. Fish Sauce
- 1 Tbsp. Fresh Lime Juice
- 2 tsp. Light Brown Sugar
- 1 C Sliced Fresh Basil Leaves

Instructions
- Mix sauce ingredients in a bowl. Heat oil in a skillet over medium high heat until hot. Add the shallots, garlic and red pepper flakes. Cook until shallots just start to soften (do not brown). Add the chicken and cook until no longer oink and the shallots begin to brown. Add sauce ingredients and heat until it slightly thickens. Remove from heat and add fresh basil.
