NuYou Baba-Ganoush (Eggplant Dip)

Ingredients
- 1/4 C Thinly Sliced Red Onion
- 6 oz. Trimmed Sugar Snap Peas
- 1 1/2 tsp. Fresh Lemon Juice
- 1 1/2 tsp. Extra Virgin Olive Oil
- 1/2 tsp. White Whine Vinegar
- 1 Packet Splenda
- 1/2 tsp Kosher Salt
- 1/2 tsp Black Pepper
- 1/4 C Crumbled Feta Cheese

Instructions
- Keep sliced onions in cold water (so they stay crisp) for 10 minutes. Drain and pat dry. Cook peas in boiling water for 2 minutes, drain and plunge into cold water. Remove and pat dry. Whisk together lemon juice, oil, vinegar, Splenda and salt & pepper in a medium size bowl. Add peas, onions and cheese. Toss until well coated.
