NuYou Baba-Ganoush (Eggplant Dip)

Ingredients
- 1/2 C Butter
- 6 Thyme Sprigs
- 1 Bay Leave
- 5 lbs. Bag Large Sweet Onion Vertically sliced, about 16 Cups
- 1 Tbsp. Red Wine Vinegar
- 1 1/2 tsp Kosher Salt
- 1 tsp Black Pepper
- 1/2 oz Whole Grain French Bread Baguette
- 2.5 oz Gruyere Cheese Shredded
- 6 C Unsalted Beef Stock

Instructions
- Place butter, thyme and bag leaf in bottom of 6 quart slow cooked. Add sliced onions, sprinkle with sugar. Cover and cook on high for 8 hours. Remove thyme and bay leaf discard. Add stock, red wine vinegar, salt & pepper. Cover and cook on high for 30 minutes. (See freezing instructions below) Baguettes Preheat broiler to high Arrange bread in a single layer on 2 baking sheets. Broil 30 seconds per side. Place 1 cup soup in ramekins or oven safe bowls. Top with bread slice and 2 Tbsps. Of cheese. Place bowls on cookie sheet and broil 2 minutes until cheese is melted.
Freezing Instructions
- Let soup cool and put in zip top freezer bag or bags. When ready to use, thaw bag in a saucepan of water for 30 minutes over medium heat. Pour soup into saucepan and simmer for 10 minutes. Continue with bread and cheese instructions.
