NuYou Baba-Ganoush (Eggplant Dip)

Ingredients
- 2 Tbsp. Extra Virgin Olive Oil
- 1 Medium Onion Chopped
- 1 Garlic Clove Minced
- 1/2 tsp Dried Thyme
- 1/2 tsp Fennel Seed
- 1/2 tsp Salt
- 1/2 tsp Pepper
- Pinch Saffron Crumbled
- 1 C No Salt Added Diced Tomatoes with Juice
- 1/4 Vegetable Broth
- 4 oz Green Beans Cut into 1" pieces
- 4 oz Bay Scallops
- 4 oz Small Shrimp (40-50 count) Peeled, deveined

Instructions
- Heat a large saucepan over medium heat. Add onion, cook stirring constantly for 3 minutes. Add garlic, thyme, fennel seed, salt, pepper and saffron, cook for 20 seconds. Stir in tomatoes, broth and green beans. Bring to simmer, cover and reduce heat and simmer for 2 minutes. Increase to medium heat, stir in scallops and cook for 2 minutes, stirring occasionally. Add shrimp and cook for 2 more minutes. Stirring occasionally. Serve & Enjoy.
