Instructions
  1. Heat a large nonstick skillet over high heat, spray with cooking spray. Season roast with salt and pepper. Add roast and sear until browned on all sides, about 3 to 4 minutes per side ~ This is very important for a good flavor. Transfer beef to slow cooker, insert oven safe thermometer into thickest part of roast. Cover and cook to 135 degrees for medium rare, 140 degrees for medium, ABOUT 1 – 2 hours. Save drippings in slow cooker. Remove and let rest for 20 – 30 minutes (this will keep the juices in). Slice across the grain.
  2. For the Gravy: In a saucepan whisk together the broth and flour over medium heat until it comes to a boil. Simmer, stirring constantly until mixture thickens. Add the drippings from slow cooker and serve with beef.
