NuYou Baba-Ganoush (Eggplant Dip)

Ingredients
- 1 1/3 Palm, rinsed and sliced into rings
- 1 C Green Beans, cooked and cooled
- 1 C Cherry Tomatoes, halved
- 1 Tbsp. Red Onion
- 3 Tbsp. Pine Nuts
Vinaigrette:
- 2 tsp. Apple Cider Vinegar
- 1 Tbsp. Fresh Squeezed Lime Juice
- 2 Tbsp. olive oil
- 2 Tbsp. Vegetable Oil
- 3/4 tsp. Kosher Salt
- 1/4 tsp. Oregano
- 1/4 C Splenda Brown Sugar
- 1/4 tsp. Black Pepper

Instructions
- Pour vinegar and lime juice in a small bowl. Add oregano, salt, sugar, and black pepper. Pour the oils into a small stream, whisking to emulsify. (Can be made a day or two ahead, emulsify right before using) Mix together hearts of palm, green beans, onion, and tomatoes with the vinaigrette. Sprinkle with pine nuts. This can be served over greens also.
