Cauliflower Steaks with Lemon-Herb Sauce

Lemon-Herb Sauce
  1. Put all ingredients in blender, blend until smooth. Set aside.
Cauliflower Steaks
  1. Cut cauliflower into 1 inch thick slices (about 8). Rub both sides of the slices with (about) 1 teaspoon oil. Sprinkle with paprika, salt, and pepper. Heat remaining 1 tablespoon olive oil in large cast iron skillet over medium high heat. In batches, sear cauliflower steaks until they are golden brown, about 4 minutes per side. Should pierce easily with a fork, but not fall apart. Serve with Lemon-Herb Sauce drizzled on top.
