Rub chops on both sides with seasoning salt.
Heat oil in a large skillet over medium heat until it shimmers. Brown pork chops, turning once, about 4 minutes on each side. Add water and onion.
Reduce heat and simmer pork chops, covered until tender, 20 minutes. Turn chops over and simmer covered until tender, 15 to 20 additional minutes.
Transfer chops to platter.
Increase heat to medium high and cook onion mixture uncovered until water is evaporated, 4 to 5 minutes, pour over the chops.
