In a small bowl, beat eggs and salt and pepper.
Toast tortilla either in skillet or oven. Set aside.
Heat oil and scallion in a small nonstick pan over medium heat.
Cook until scallion is soft. Add egg mixture, stirring constantly for 1 to 2 minutes.
Spoon egg mixture on to tortilla and top with salsa and sour cream.
Optional:
Add cooked and crumbled Turkey Sausage
