NuYou Baba-Ganoush (Eggplant Dip)

Ingredients
- 2 T Cider Vinegar
- 3 T Reduced Sodium Soy Sauce
- 1 T Brown Sugar Splenda
- 1/4 t crushed red pepper
- 8 oz Bonelss Beef Sirloin Ttrimmed of fat and sliced thinly across the grain into bite size strips
- 3 T Vegetable Oil
- 2 garlic Cloves Minced
- 1 lb Fresh Green Beans OR Asparagus
- 2 C Red Onion Sliced

Instructions
- In bowl combine first four ingredients. Heat two tablespoons oil in a large skillet over medium high heat. Add garlic, cook and stir 30 seconds, add beef and cook two minutes, remove and keep warm. Add another tablespoon oil over medium heat, add half the beans or asparagus, cook, stirring about 3 minutes, add remaining beans or asparagus, mushrooms and onion, cook about 4 minutes until beans are blistered and onions crisp tender. Return beef to skillet with accumulated juices
