NuYou Baba-Ganoush (Eggplant Dip)

Ingredients
- 1 Tbsp. olive oil
- 1/2 Cup Chopped Onion
- 3 Garlic Cloves, minced
- 1/2 Cup Water
- 1/4 Cup Reduced Sodium Worcestershire Sauce
- 1/4 Dry White Wine
- 2 Tbsp. Chopped Fresh Parsley
- 1 Tbsp. Fresh Rosemary
- 3/4 tsp. Creole Seasoning
- 3 Lemons, sliced
- 2 lbs. Large Shrimp

Instructions
- Heat oil in large Dutch oven over medium heat. Add onion and garlic and sauté 3 minutes or until tender. Stir in 1/2 cup of water, Worcestershire sauce, wine, parsley, rosemary and sliced lemons. Add shrimp, cover and reduce heat. Simmer 4-5 minutes or until cooked through.
